Indicative values based on whole pearl millet composition. Ingredients: heat-treated pearl millet, salt. Figures printed on pack come from our own lab analysis of that lot.
How to Prepare
- Whisk 200 g mix into 600 ml cold water until completely lump-free
- Bring to a boil and cook 3–4 minutes, stirring
- Cool completely — this is important, it is not drunk hot
- Thin with thick buttermilk or thin curd, add salt, finely chopped small onions, green chilli and curry leaf
- For traditional fermented koozh: cook it in the evening, leave the covered pot at room temperature overnight, then add buttermilk in the morning
Storage Instructions
- Best quality within 2–3 months. We deliberately sell this in small packs and print a short date.
- Pearl millet flour is the fastest-spoiling millet flour there is — its natural fat combined with very active enzymes produces a bitter note if it sits too long. Ours is heat-treated to slow this, but it does not stop it.
- Refrigerate after opening.
- Airtight container, away from heat and light.
- A strongly bitter or soapy taste means the flour has aged — check the date.
Certifications & Compliance
- FSSAI licensed food business — licence number displayed in our website footer.
- Made in small batches from our own traditional-variety grain.
- No maida, no added sugar, no preservative, no artificial colour or flavour.
- Organic certification: PGS-India / NPOP (certificate available on request).
Frequently Asked Questions
Why does it taste slightly bitter?
Freshly milled kambu is mildly bitter by nature. A strongly bitter or soapy taste means the flour has aged — check the best-before date and store it cool.
Can I ferment it overnight like traditional koozh?
Yes. Cook it, cover the pot, leave it at room temperature overnight, then add buttermilk and salt in the morning.
Why do you only sell small packs?
Because pearl millet flour genuinely does not keep. We would rather sell you 250 g that tastes right than 1 kg that turns bitter halfway through.
